Difference Between Herbs, Spices, Condiments & SeasoningsHerbs are green non woody plants that last only till flowering. The leaves and green parts of these plants are used. They may be used fresh or dried. Examples of herbs are mint, basil, thyme, oregano, rosemary etc.
Spices are dried parts of plants like stem, root, bulb, seeds and bark. Examples of spices are garlic, ginger, cinnamon, black pepper etc. They are used to season food while it is being cooked. Condiment is a spice or a mixture of more spices, sauces or any other food preparation. They are however added after the cooking is over and just before the dish is served. Examples of condiments are tomato ketchup, soy sauce, mustard sauce etc. Seasonings are herbs, spices, salt or any other ingredient.
