Millets are small seeds from several species of the grass family, Poaceae. Their seeds are edible and were traditionally used all over the world by our forefathers before the Green revolution in the 1960s. in India, brought in the cultivation of wheat and rice on a massive scale.
Millets are high in fiber and because of their unique carbohydrate/fibre ratio, which is very low as compared to wheat and rice, and the unique spiral arrangement of fibre and carbohydrates layers in the grains, offer some unique health benefits which wheat and rice cannot.
